In honor of Johnny Appleseed's birthday today and the recent changing of the seasons, I thought I'd share with you this simple recipe that screams Fall.
Crockpot Baked Apple Slices
5 apples, peeled, cored, and sliced
1/4 cup brown sugar
1/4 cup granulated sugar
1/2 cup apple juice
2 Tbsp cornstarch
1/8 tsp ground nutmeg
1 Tbsp cinnamon
1/2 tsp vanilla
1 Tbsp butter, cubed
- Peel, core, and slice the apples.
- Add apples, sugars, apple juice, cornstarch, nutmeg, cinnamon, and vanilla to crockpot, stirring to incorporate.
- Place butter on top of apples
- Cook on high for 1 1/2 hours or on low for 4-5 hours. Stir mixture halfway through cooking.
Notes:
I used Fuji apples, but choose your favorite baking apple.
You can substitute water for the apple juice in the recipe.
These apples are delicious as a side dish (on their own), but you can also try them mixed into oatmeal, over pancakes or waffles, as filling for crepes, served over vanilla ice cream as dessert, or in these Harris Sisters recipes:

ReplyDeleteHi Anonymous! First, let me say that these will really be a hit with the kids. And, yes you can easily double the recipe provided you have enough space in your crockpot. I'm looking at the photo above and see that I used my smaller crockpot for this recipe. My larger crockpot can fit up between 12-15 apples for my Crockpot Apple Butter recipe and could easily do the trick for a double batch of this recipe. I would say that this recipe makes about 10 servings as written.

ReplyDeleteHi Laura, These apples are completely cooked and are made to eat immediately after cooking. That said, if you would like to freeze them, they would probably freeze well if you start with a firm apple and slightly undercook them. That should adjust for any additional moisture they will pick up from the freezing process. If you intend to freeze and then use these as apple pie filling (as several commenters above have suggested) about 2 1/2 cups of apples would equal one can of filling. Good luck!

ReplyDeleteHi Anonymous, I have never tried this recipe other than in the crockpot, but you could try it in a large pot on top of your stove. Cook over medium heat (covered) until apples are tender. Good luck!
ReplyDeleteI was wondering if you can use peaches that you have fresh that you froze from the summer in the crockpot instead of the apples .And use them a pie or a crisp or cobbler
ReplyDeleteHi Anonymous! I'm sure that peaches would work well in the recipe as far as the spices go. They might not need as much cooking time, especially if they've been previously frozen, so keep an eye on them. Good luck!
