Well, I surprised even myself with this recipe. I wanted to make dinner with ingredients I already had on hand and it turned out great! This recipe features a creamy Alfredo sauce but it's balanced out with spinach and white beans so you don't feel quite so guilty! ;-)

Spinach White Bean Gnocchi
4 oz. cream cheese, cubed
1 stick butter
1 cup Parmesan cheese
1 cup milk
4 cloves garlic, minced
10 oz. package frozen creamed spinach
1, 15 oz can white beans, drained
2, 16 oz packages gnocchi
salt and pepper to taste
- In a large saute pan, combine cream cheese, butter, Parmesan cheese, milk, and garlic over medium low heat. Cook on medium-low heat until cream cheese and butter are melted and all ingredients are incorporated, stirring frequently.
- While sauce is cooking, prepare spinach and gnocchi according to package directions. Drain gnocchi.
- Add drained beans, prepared spinach, and drained gnocchi to sauce. Stir to combine. Add salt and pepper to taste.
