Rainbow Pasta Salad

This recipe is another one that is great for all those cookouts that will be coming up in the summer months. It will make a great addition to your Memorial Day or Fourth of July get together. Give it a try - you'll be surprised at how quick and easy it is.


Rainbow Pasta Salad
1 16 oz package tri-colored rotini pasta
2 large tomatoes, diced
1 large cucumber, diced
6 green onions, chopped
1 16 oz bottle Italian dressing of choice
 
  1. Cook pasta according to package directions, making sure that you cook it until al dente. Drain and cool.
  2. In a large bowl combine pasta, tomatoes, cucumbers, onion, and Italian dressing. Refrigerate overnight or for at least one hour.
Note:
One red onion, finely chopped can be substituted for green onions if a stronger onion flavor is desired.
