TO DIE FOR? Really? Yes. They are that good, and this is clearly another example of a recipe that calls it what it is.
So, before you judge this recipe by its name with slightly 1980's slang origins, just know that these muffins are legit (because I like totally, wouldn't introduce you to anything lame, Dude).
To Die For Blueberry Muffins
1 1/2 cups all purpose flour
3/4 cup granulated sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup blueberries (fresh or frozen)
- Preheat oven to 400 degrees F. Line muffin tin with 12 muffin liners.
- Combine 1 1/2 cups flour, 3/4 cup sugar, salt, and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with the flour mixture. Fold in blueberries. Fill muffin cups and sprinkle with crumb topping mixture (recipe below).
- Bake for 20 to 25 minutes in preheated oven.
Crumb Topping
1/2 cup granulated sugar
1/3 cup all purpose flour
1/4 cup butter, cubed
1 1/2 tsp ground cinnamon
- Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
CAUTION:
These are so good - they'll have YOU talking like a Valley Girl in no time flat. For sure.
