Pumpkin White Chocolate Chip Cookies
4 sticks butter, softened
2 cups granulated sugar
16 oz. pumpkin puree
2 eggs
4 cups all purpose flour
2 tsp. pumpkin pie spice
1 tsp baking powder
1/2 tsp baking soda
12 oz. white chocolate chips
- Preheat oven to 375 degrees. Line cookie sheets with parchment paper.
- Beat butter and sugar in a large mixing bowl until light and fluffy.
- Add pumpkin and eggs and beat until smooth.
- Add flour, pumpkin pie spice, baking powder, and baking soda and beat until well blended.
- Stir in white chocolate chips.
- Drop by rounded spoonfuls onto cookie sheets. Bake about 12-14 minutes (until set and bottoms are browned).
- Cool 5 minutes on cookie sheets and then transfer to wire racks to cool completely.
