Pumpkin White Chocolate Chip Cookies

Pumpkin White Chocolate Chip Cookies

4 sticks butter, softened
2 cups granulated sugar
2 eggs
4 cups all purpose flour
2 tsp. pumpkin pie spice
1 tsp baking powder
1/2 tsp baking soda
12 oz. white chocolate chips

  1. Preheat oven to 375 degrees. Line cookie sheets with parchment paper.
  2. Beat butter and sugar in a large mixing bowl until light and fluffy.
  3. Add pumpkin and eggs and beat until smooth.
  4. Add flour, pumpkin pie spice, baking powder, and baking soda and beat until well blended.
  5. Stir in white chocolate chips.
  6. Drop by rounded spoonfuls onto cookie sheets. Bake about 12-14 minutes (until set and bottoms are browned).
  7. Cool 5 minutes on cookie sheets and then transfer to wire racks to cool completely.
