Spinach White Bean Gnocchi

Well, I surprised even myself with this recipe. I wanted to make dinner with ingredients I already had on hand and it turned out great! This recipe features a creamy Alfredo sauce but it's balanced out with spinach and white beans so you don't feel quite so guilty! ;-)

Spinach White Bean Gnocchi

4 oz. cream cheese, cubed
1 stick butter
1 cup Parmesan cheese
1 cup milk
4 cloves garlic, minced
10 oz. package frozen creamed spinach
1, 15 oz can white beans, drained
2, 16 oz packages gnocchi
salt and pepper to taste

  1. In a large saute pan, combine cream cheese, butter, Parmesan cheese, milk, and garlic over medium low heat. Cook on medium-low heat until cream cheese and butter are melted and all ingredients are incorporated, stirring frequently.
  2. While sauce is cooking, prepare spinach and gnocchi according to package directions. Drain gnocchi.
  3. Add drained beans, prepared spinach, and drained gnocchi to sauce. Stir to combine. Add salt and pepper to taste.
