That said, if you would like to freeze them, they would probably freeze well if you start with a firm apple and slightly undercook them. That should adjust for any additional moisture they will pick up from the freezing process. If you intend to freeze and then use these as apple pie filling (as several commenters above have suggested) about 2 1/2 cups of apples would equal one can of filling. And, yes you can easily double the recipe provided you have enough space in your crockpot. I'm looking at the photo above and see that I used my smaller crockpot for this recipe. My larger crockpot can fit up between 12-15 apples for my Crockpot Apple Butter recipe and could easily do the trick for a double batch of this recipe.
